For most people who work a 9 to 5 job, the thing you look forward to the most (besides leaving for the day) is lunch. There are two choices; drive in chaotic traffic and spend hundreds of dollars a week just on lunch and rush back to the office, or bring your own lunch. I don't know about you but I try to save as much money as I can. Also if you're like me, you hit the snooze button on your alarm until you have just enough time to get ready and walk the dog. There's no way I have time to actually make a lunch, so that leaves leftovers. Usually it's a dingy plastic container in the back of the fridge that hopefully tastes better than it looks. It seems to be the same with so many people that a blog has been created called Sad Desk Lunch. For leftovers there seems to be two options; either make enough of dinner for a full meal or make a new meal with a few items left over from dinner. Lunches from leftover dinners are simple; put it in a container and reheat it the next day. Some dinners that can make abundant servings are lasagna, soups, and pasta dishes. Simply take a hoagie roll and pile on the sliced steak, along with whatever cheese you have in the fridge for an incredibly easy steak and cheese sandwich. You can also sauté mushrooms and onions the night before to kick up your sandwich even more, as well as add some nutritional benefits. I always end up making too much pasta and always have a lot left over. Mix up your leftover pasta with some light mayonnaise or olive oil and lots of chopped up veggies for a fresh and simple pasta salad that’s perfect for a light lunch. Leftover chicken can be used for all kinds of things, from sandwiches and wraps to salads and soups, but making chicken tacos for lunch takes leftover chicken to another level. Shred some leftover chicken, wrap it up in small tortillas and throw some shredded cheese, lettuce, salsa and sour cream into the lunchbox for a fun build-your-own taco lunch. With a little creativity, you can spice up your lunch life so you never have to have a 'Sad Desk Lunch' again.
